May - June 2011: Our Spring Tea and Quilt Show on April 16th was a great success. We served tea, scones, assorted hors d’oeurves and desserts with special toppings. Jan Truelove (with her many helpers) did the planning, decorations and the food. Ann Hope Marvin (with her many helpers) staged the Quilt Show. Thanks to all -it would take a whole page to list everyone! We all enjoyed “dressing up” for the occasion! The Easter Hat contest for the Prettiest Hat was won by Sarah Williams.
The Funniest Hat prize was won by Lois Poignee. Many door prizes were awarded. Flowers for decorations and door prizes were donated by Home Depot, WalMart & Maxway. Thanks so much to these merchants! We had many compliments on our Tea and Quilt Show!!! When is the next one? Maybe next year! Watch in our Island Senior News and we will let you know!
Welcome back to our “Summer People” coming south for June, July and August! We will miss our “Winter People” who go north for the summer - look forward to seeing you next fall and winter! $$$$ OUR SURPRISE DONATION $$$$: On Saturday, March 26th, the 15th Annual Wilmington Wing Fling was held on the Boardwalk in Carolina Beach. This event is sponsored & organized by students and several professors at UNCW for charity. On Thursday, April 21st, we were delightfully SURPRISED with a DONATION to Katie B. Hines Senior Center by this group of $4,000.00 from the proceeds of the Wing Fling! Please encourage our Mayor, Town Council and Police Chief to invite them back to hold the 16th Annual Wilmington Wing Fling here in Carolina Beach next year!
Recipe of the Month - Carmelized Onions: EASY - INEXPENSIVE - DELICIOUS with Chicken, Pork, Beef or just Veggies!!! 2 Servings Preparation Time - 10 Min. Cook Time - 25-30 Min. 2-3 Large Sweet (or Vidalia) Onions, 2 T. Extra Virgin Olive Oil thinly sliced vertically 1 teaspoon Sugar (optional), 1/2 teaspoon Sea Salt. In a large skillet, heat 1 T. of the olive oil over medium-high heat. Add sliced onions, stirring constantly until onions begin to soften - 5 to 8 minutes.Stir in sea salt, 1 T. olive oil and 1 teaspoon of sugar, if desired. Cook, scraping the browned bits of onion off the bottom of the pan frequently, until the onions are golden brown - about 15-20 minutes. (Onions do “cook down” quite a lot!) Serve and enjoy!
